CUCUMBER SAUCE

Place the cucumber slices in a colander and sprinkle with the salt.  Let drain for 1 hour.  Prepare the dressing.  In a serving bowl stir together the cr¸me fra”che, vinegar, tarragon, and a pinch of  pepper.  Wrap the cucumber slices in a clean towel and squeeze gently to dry them.  Add the cucumber to the dressing and mix well.  Serve immediately.
